The pie professionals at 'Zaw use what they call SOUL—ingredients that are Seasonal, Organic, Unique, and Local—to handcraft a menu of culinary circles for take-home baking. Bob's Red Mill flour goes into each crust, rising to form traditional, whole-wheat, or gluten-free ($3 extra on a medium pie; $4 extra on a large) varieties. Next, house-made ruby-red tomato sauce (substituted by extra-virgin olive oil on request) paints a zesty background for organic toppings. Customers can choose from 15 specialty pizzas, such as the prosciutto-and-pear-highlighted Pig 'n’ Pear pizza ($14.95–$17.95), with customization requests happily welcomed. On the My Big Fat Greek Pizza's ($14.95–$17.95) landscape, sun-dried and moon-baked tomatoes speckle house-made pesto alongside roasted garlic, kalamata olives, and free-range chicken.
